Kohlrabi lemon pepper slices

Lemon pepper kohlrabi slices
Serves 2
1 Kohlrabi, quartered, peeled and sliced
1 -2 Tbsp lemon juice
Freshly ground black pepper to taste
Pinch salt
¼ cup chopped parsley
8 cherry tomatoes, sliced
¼ cup chopped parsley

Preheat oven to 180°C.
Lightly spray a baking dish with oil.
Place kohlrabi slices in dish and sprinkle with lemon juice, pepper, salt and parsley.
Bake for 15-20 minutes until the kohlrabi is soft [time will depend on thickness of slices].
Arrange slices on a plate, top with cherry tomatoes and sprinkle with remaining parsley.
