To Glaze a Cooked New Zealand Ham

Preheat the oven to 160ºC. 
Weigh the ham and calculate the cooking time; allow about 10 minutes per 500gm.
Remove the outer skin from the ham.
Remove excess fat.
Score the outside to make diamond design.
Mix the glaze ingredients together and brush over the ham.
Place ham in a large baking dish and cook for calculated time or until the ham is golden brown.
Brush the ham with the glaze 3-4 times during cooking.

Two of my favourite glazes

Orange and mustard
½ cup orange marmalade
½ cup grainy mustard
Salt and freshly ground pepper

Apricot and chilli
½ cup apricot jam
½ - 1 tablespoon minced chilli
2 tablespoons dry white wine
2 tablespoons pineapple juice
